Description

A simple and healthy steak fajita recipe made in a crock-pot. Tender strips of beef, bell peppers, and onions cook slowly for maximum flavor with minimal effort.


Ingredients

  • 1.5 lbs flank steak, sliced into thin strips
  • 2 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup beef broth
  • Juice of 1 lime
  • 8 small whole wheat tortillas


Instructions

  1. Place sliced steak, bell peppers, onion, and garlic in the crock-pot.
  2. In a small bowl, mix olive oil, chili powder, cumin, paprika, salt, pepper, beef broth, and lime juice.
  3. Pour the mixture over the ingredients in the crock-pot and stir to coat evenly.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Serve the fajita mixture on warm tortillas with your favorite toppings.

  • Use any color bell peppers for variety.
