Description
A simple and healthy steak fajita recipe made in a crock-pot. Tender strips of beef, bell peppers, and onions cook slowly for maximum flavor with minimal effort.
Ingredients
- 1.5 lbs flank steak, sliced into thin strips
- 2 bell peppers (any color), sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup beef broth
- Juice of 1 lime
- 8 small whole wheat tortillas
Instructions
- Place sliced steak, bell peppers, onion, and garlic in the crock-pot.
- In a small bowl, mix olive oil, chili powder, cumin, paprika, salt, pepper, beef broth, and lime juice.
- Pour the mixture over the ingredients in the crock-pot and stir to coat evenly.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Serve the fajita mixture on warm tortillas with your favorite toppings.
Notes
- Use any color bell peppers for variety.
- For extra flavor, marinate the steak in the spice mixture for 30 minutes before cooking.
- Leftovers can be stored in the fridge for up to 3 days.
