A simple and healthy crockpot recipe for beefy cheesy potatoes. Perfect for a hearty meal with minimal effort.
Ingredients
- 1 lb lean ground beef
- 4 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Layer the diced potatoes, cooked beef, onion, and bell pepper in the crockpot.
- In a bowl, mix the cream of mushroom soup, milk, garlic powder, salt, and pepper. Pour over the ingredients in the crockpot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Stir the mixture, then sprinkle shredded cheddar cheese on top. Cover and cook for an additional 10 minutes until the cheese melts.
- Serve hot.
Notes
- You can use frozen diced potatoes to save time.
- For extra flavor, add a pinch of paprika or red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
