Description
A simple and healthy slow-cooked chicken gnocchi soup that’s perfect for a quick weeknight meal.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 package (16 oz) potato gnocchi
- 4 cups low-sodium chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- 1 cup fresh spinach
- 1/2 cup heavy cream (optional)
Instructions
- Place chicken breasts, carrots, celery, onion, garlic, thyme, parsley, and black pepper in the crockpot.
- Pour chicken broth over the ingredients and stir gently.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken and shred it with two forks. Return to the crockpot.
- Add gnocchi and spinach. Stir well and cook on high for 15-20 minutes until gnocchi is tender.
- If using, stir in heavy cream just before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For a thicker soup, mash some of the gnocchi before serving.
- Omit heavy cream for a dairy-free version.
