Description

A simple and healthy slow-cooked chicken gnocchi soup that’s perfect for a quick weeknight meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 package (16 oz) potato gnocchi
  • 4 cups low-sodium chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 1 cup fresh spinach
  • 1/2 cup heavy cream (optional)


Instructions

  1. Place chicken breasts, carrots, celery, onion, garlic, thyme, parsley, and black pepper in the crockpot.
  2. Pour chicken broth over the ingredients and stir gently.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Remove chicken and shred it with two forks. Return to the crockpot.
  5. Add gnocchi and spinach. Stir well and cook on high for 15-20 minutes until gnocchi is tender.
  6. If using, stir in heavy cream just before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For a thicker soup, mash some of the gnocchi before serving.
  • Omit heavy cream for a dairy-free version.
