Description

A simple, healthy Mediterranean-inspired dish made in the crockpot with tender chicken, olives, and brown rice.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup brown rice, uncooked
  • 1 cup pitted Kalamata olives
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Add olive oil to the crockpot and spread evenly.
  2. Place chicken breasts at the bottom.
  3. Add brown rice, olives, diced tomatoes, garlic, oregano, basil, salt, and pepper.
  4. Pour chicken broth over everything.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Shred chicken with forks before serving.

Notes

  • For extra flavor, add a sprinkle of feta cheese before serving.
  • Store leftovers in an airtight container for up to 3 days.
  • You can swap Kalamata olives for green olives if preferred.
