Description
A simple, healthy Mediterranean-inspired dish made in the crockpot with tender chicken, olives, and brown rice.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 cup brown rice, uncooked
- 1 cup pitted Kalamata olives
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Add olive oil to the crockpot and spread evenly.
- Place chicken breasts at the bottom.
- Add brown rice, olives, diced tomatoes, garlic, oregano, basil, salt, and pepper.
- Pour chicken broth over everything.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred chicken with forks before serving.
Notes
- For extra flavor, add a sprinkle of feta cheese before serving.
- Store leftovers in an airtight container for up to 3 days.
- You can swap Kalamata olives for green olives if preferred.
