Description
A simple and healthy one-pot meal with tender potatoes and savory sausage cooked in a crockpot.
Ingredients
- 1 lb smoked sausage, sliced
- 1.5 lbs baby potatoes, halved
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 cup chicken broth
- 1 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sausage and cook for 3-4 minutes until lightly browned.
- Transfer sausage to the crockpot.
- Add potatoes, onion, garlic, bell pepper, paprika, salt, and black pepper to the crockpot.
- Pour chicken broth over the ingredients.
- Cover and cook on low for 6 hours or high for 3 hours.
- Garnish with fresh parsley before serving.
Notes
- Use turkey sausage for a leaner option.
- Add other vegetables like carrots or zucchini if desired.
- Stir once halfway through cooking if possible.
