Description

Ingredients

  • 4 large onions, thinly sliced
  • 2 tbsp olive oil
  • 4 cups low-sodium vegetable broth
  • 1 tsp thyme
  • 1 bay leaf
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 4 slices whole-grain bread
  • 1 cup shredded low-fat Swiss cheese


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and cook, stirring occasionally, until caramelized (about 25 minutes).
  3. Pour in vegetable broth, thyme, bay leaf, and balsamic vinegar. Simmer for 15 minutes.
  4. Season with salt and pepper.
  5. Toast the bread slices.
