Description
A simple and healthy version of French onion soup with caramelized onions, rich broth, and melted cheese.
Ingredients
- 4 large onions, thinly sliced
- 2 tbsp olive oil
- 4 cups low-sodium vegetable broth
- 1 tsp thyme
- 1 bay leaf
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- 4 slices whole-grain bread
- 1 cup shredded low-fat Swiss cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and cook, stirring occasionally, until caramelized (about 25 minutes).
- Pour in vegetable broth, thyme, bay leaf, and balsamic vinegar. Simmer for 15 minutes.
- Season with salt and pepper.
- Toast the bread slices.
- Ladle soup into bowls, top with toasted bread and shredded cheese.
- Broil for 2-3 minutes until cheese is melted and bubbly.
Notes
- For extra flavor, add a splash of red wine.
- Store leftovers in the fridge for up to 3 days.
- Use a mandoline for even onion slices.
