Description
A refreshing and healthy salad with Greek flavors, featuring cauliflower rice, artichokes, and a light lemon dressing.
Ingredients
- 1 head cauliflower, grated into rice
- 1 can artichoke hearts, drained and chopped
- 1 cucumber, diced
- 1/2 red onion, finely sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Grate the cauliflower into rice-sized pieces using a food processor or box grater.
- In a large bowl, combine the cauliflower rice, artichoke hearts, cucumber, red onion, olives, and feta.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and toss to coat evenly.
- Garnish with fresh parsley and serve chilled.
Notes
- For a vegan version, omit the feta cheese.
- Store leftovers in an airtight container for up to 3 days.
- Add cherry tomatoes or bell peppers for extra color and flavor.
