A quick and healthy twist on the classic quesadilla using lean ground beef and fresh vegetables.


Ingredients

  • 1/2 lb lean ground beef (93% lean)
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 tsp olive oil
  • 1 tsp taco seasoning
  • 4 whole wheat tortillas
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 1/4 cup salsa
  • 1/4 cup plain Greek yogurt (for serving)


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and bell peppers, sauté for 3 minutes.
  3. Add ground beef and taco seasoning, cook until beef is browned (5-6 minutes).
  4. Place a tortilla on a clean surface, spread half the beef mixture on one side.
  5. Sprinkle cheese over the beef and fold the tortilla in half.
  6. Cook the quesadilla in a dry skillet for 2 minutes per side until golden.
  7. Repeat with the remaining tortillas and filling.
  8. Serve with salsa and Greek yogurt on the side.
