A simple and healthy low-carb chicken casserole that’s easy to prepare and packed with flavor.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup broccoli florets
- 1/2 cup cauliflower, chopped
- 1/2 cup bell peppers, diced
- 1/2 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix shredded chicken, broccoli, cauliflower, and bell peppers.
- In a separate bowl, combine heavy cream, garlic powder, onion powder, salt, and black pepper.
- Pour the cream mixture over the chicken and vegetables, then stir well.
- Transfer the mixture to a greased baking dish.
- Sprinkle cheddar and Parmesan cheese on top.
- Bake for 25-30 minutes until bubbly and lightly golden.
- Let cool for 5 minutes before serving.
Notes
- Use rotisserie chicken for quicker prep.
- Swap vegetables based on preference.
