A simple and healthy mashed sweet potato recipe that’s easy to make and packed with nutrients.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1/4 cup unsweetened almond milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
Instructions
- Boil sweet potatoes in water until tender, about 15 minutes.
- Drain and return to the pot.
- Add olive oil, almond milk, salt, pepper, garlic powder, and paprika.
- Mash until smooth or leave slightly chunky if preferred.
- Serve warm.
Notes
- For creamier texture, add more almond milk.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
