A healthy twist on the classic Monte Cristo sandwich, these breakfast sliders are easy to make and packed with flavor.


Ingredients

  • 6 whole wheat slider buns
  • 6 slices turkey breast
  • 6 slices low-fat Swiss cheese
  • 3 eggs
  • 1/4 cup milk
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 tbsp olive oil
  • Fresh spinach leaves


Instructions

  1. Preheat oven to 350°F.
  2. Whisk eggs, milk, Dijon mustard, and honey in a bowl.
  3. Heat olive oil in a pan over medium heat.
  4. Dip slider buns in the egg mixture and cook until golden brown.
  5. Layer turkey, cheese, and spinach on the bottom half of each bun.
