Description
A simple, healthy overnight bread made with dark rye, spelt, and oats. Perfect for a quick breakfast or snack.
Ingredients
- 200g dark rye flour
- 100g spelt flour
- 50g rolled oats
- 1 tsp salt
- 1 tsp instant yeast
- 300ml water
- 1 tbsp honey
Instructions
- Mix all dry ingredients in a large bowl.
- Add water and honey, then stir until combined.
- Cover the bowl and let it rest overnight at room temperature.
- Preheat the oven to 200°C (390°F).
- Transfer the dough to a greased loaf pan.
- Bake for 40-45 minutes until golden brown.
- Let it cool before slicing.
Notes
- Store in an airtight container for up to 3 days.
- For a crustier texture, bake in a Dutch oven.
- Adjust honey to taste.
