Description

A simple, healthy overnight bread made with dark rye, spelt, and oats. Perfect for a quick breakfast or snack.


Ingredients

  • 200g dark rye flour
  • 100g spelt flour
  • 50g rolled oats
  • 1 tsp salt
  • 1 tsp instant yeast
  • 300ml water
  • 1 tbsp honey


Instructions

  1. Mix all dry ingredients in a large bowl.
  2. Add water and honey, then stir until combined.
  3. Cover the bowl and let it rest overnight at room temperature.
  4. Preheat the oven to 200°C (390°F).
  5. Transfer the dough to a greased loaf pan.
  6. Bake for 40-45 minutes until golden brown.
  7. Let it cool before slicing.

Notes

  • Store in an airtight container for up to 3 days.
  • For a crustier texture, bake in a Dutch oven.
