Ingredients
- 2 large onions, sliced
- 2 tbsp olive oil
- 4 cups mixed greens
- 100g goat cheese, crumbled
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat oven to 200°C (400°F).
- Toss onion slices with olive oil, salt, and pepper.
- Roast onions for 20 minutes until caramelized.
- Arrange mixed greens on a plate.
- Top with roasted onions and crumbled goat cheese.
- Drizzle with balsamic vinegar before serving.
