Description
A simple and healthy sheet pan dinner featuring Italian sausage and potatoes. Perfect for a quick weeknight meal.
Ingredients
- 1 lb Italian sausage, sliced
- 1.5 lbs baby potatoes, halved
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes, bell peppers, and onion with olive oil, oregano, basil, salt, and pepper.
- Spread vegetables on a sheet pan in a single layer.
- Add sliced Italian sausage on top.
- Bake for 25-30 minutes, stirring halfway, until potatoes are tender and sausage is cooked.
- Serve immediately.
Notes
- Use pre-cooked sausage for a faster cook time.
- Swap bell peppers for zucchini or broccoli if preferred.
- Store leftovers in an airtight container for up to 3 days.
