Description

Ingredients

  • 1 lb Italian sausage, sliced
  • 1.5 lbs baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes, bell peppers, and onion with olive oil, oregano, basil, salt, and pepper.
  3. Spread vegetables on a sheet pan in a single layer.
  4. Add sliced Italian sausage on top.
  5. Bake for 25-30 minutes, stirring halfway, until potatoes are tender and sausage is cooked.
  6. Serve immediately.
