Description
A quick and healthy Korean cucumber salad with a spicy kick. Perfect as a side dish or light meal.
Ingredients
- 2 medium cucumbers (sliced thin)
- 1 tsp salt
- 1 tbsp gochugaru (Korean red pepper flakes)
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp sugar
- 1 tbsp minced garlic
- 1 tbsp toasted sesame seeds
Instructions
- Slice cucumbers thinly and toss with salt. Let sit for 10 minutes.
- Rinse cucumbers and pat dry.
- Mix all remaining ingredients in a bowl.
- Add cucumbers and toss to coat.
- Serve immediately or chill for 30 minutes.
Notes
- Use English or Persian cucumbers for best texture.
- Adjust gochugaru to your preferred spice level.
- Keeps refrigerated for up to 2 days.
