Ingredients
- 4 large eggs
- 1/4 cup cottage cheese
- 1/4 cup shredded cheese (cheddar or Swiss)
- 1/4 cup diced bell peppers
- 1/4 cup spinach, chopped
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for greasing)
Instructions
- Preheat oven to 300°F (150°C).
- Grease a muffin tin with olive oil.
- Blend eggs, cottage cheese, salt, and pepper until smooth.
- Stir in shredded cheese, bell peppers, and spinach.
- Pour mixture evenly into muffin cups.
- Bake for 20-25 minutes until set.
- Let cool before removing from the tin.
