Description
Delicious and nutritious sweet potato falafel bites that are easy to make and packed with flavor.
Ingredients
- 1 large sweet potato (peeled and diced)
- 1 can chickpeas (drained and rinsed)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/4 cup fresh parsley (chopped)
- 1/4 cup flour (or gluten-free alternative)
- 1 tbsp olive oil
- Salt and pepper (to taste)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Boil sweet potato until tender, then mash.
- Combine mashed sweet potato, chickpeas, onion, garlic, cumin, coriander, paprika, parsley, flour, olive oil, salt, and pepper in a food processor. Pulse until well mixed.
- Form mixture into small balls and place on the baking sheet.
- Bake for 20-25 minutes until golden and firm.
- Serve warm with your favorite dip.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For crispier falafel, lightly spray with oil before baking.
- Substitute flour with gluten-free flour if needed.
