Description

Delicious and nutritious sweet potato falafel bites that are easy to make and packed with flavor.


Ingredients

  • 1 large sweet potato (peeled and diced)
  • 1 can chickpeas (drained and rinsed)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup flour (or gluten-free alternative)
  • 1 tbsp olive oil
  • Salt and pepper (to taste)


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Boil sweet potato until tender, then mash.
  3. Combine mashed sweet potato, chickpeas, onion, garlic, cumin, coriander, paprika, parsley, flour, olive oil, salt, and pepper in a food processor. Pulse until well mixed.
  4. Form mixture into small balls and place on the baking sheet.
  5. Bake for 20-25 minutes until golden and firm.
  6. Serve warm with your favorite dip.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For crispier falafel, lightly spray with oil before baking.
