Description
A quick and easy keto-friendly version of egg rolls without the wrapper. Packed with flavor and low in carbs.
Ingredients
- 1 lb ground pork
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/2 cup onion, diced
- 4 cups coleslaw mix
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tsp red pepper flakes
- 2 green onions, sliced
- 1 tbsp sesame seeds
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add ground pork and cook until browned, breaking it into small pieces.
- Add garlic, ginger, and onion. Cook for 2 minutes.
- Stir in coleslaw mix, soy sauce, rice vinegar, and red pepper flakes. Cook for 5 minutes.
- Top with green onions and sesame seeds before serving.
Notes
- Use coconut aminos for a soy-free option.
- Add more vegetables like bell peppers or mushrooms if desired.
- Store leftovers in an airtight container for up to 3 days.
