Ingredients

  • 2 whole wheat English muffins, split
  • 4 eggs
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped mushrooms
  • 1/4 cup shredded low-fat cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toast the English muffin halves lightly.
  3. Heat olive oil in a pan and sauté the bell peppers and mushrooms for 3-4 minutes.
  4. Place the toasted muffin halves on a baking sheet.
  5. Top each muffin half with sautéed veggies.
