Healthy espresso protein balls are a quick and nutritious snack packed with coffee flavor and protein. Perfect for a post-workout boost or an afternoon pick-me-up.
Ingredients
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 2 scoops vanilla protein powder
- 1 tbsp instant espresso powder
- 1 tsp vanilla extract
- 1/4 cup dark chocolate chips (optional)
- 1 tbsp chia seeds (optional)
Instructions
- In a large bowl, mix oats, protein powder, and espresso powder.
- Add almond butter, honey, and vanilla extract. Stir until well combined.
- Fold in chocolate chips and chia seeds if using.
- Roll the mixture into small balls (about 1-inch diameter).
- Place on a tray and refrigerate for 30 minutes to firm up.
- Store in an airtight container in the fridge for up to a week.
Notes
- Use a cookie scoop for even-sized balls.
- Adjust sweetness by adding more or less honey.
- For a stronger coffee flavor, increase the espresso powder.
