A nutritious and flavorful salad combining farro, apples, and pecans for a balanced meal.
Ingredients
- 1 cup farro
- 2 cups water
- 1 apple, diced
- 1/2 cup pecans, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse the farro under cold water.
- Cook farro in boiling water for 25 minutes or until tender.
- Drain and let cool.
- Mix diced apple, pecans, olive oil, lemon juice, salt, and pepper in a bowl.
- Add cooled farro and toss gently.
- Serve chilled or at room temperature.
