Ingredients
- 1 can (15 oz) chickpeas, drained
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 tbsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp ginger, grated
- 2 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in curry powder, cumin, turmeric, and ginger. Cook for 1 minute.
- Add chickpeas, diced tomatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Season with salt and pepper.
- Serve hot.
