Description
A delicious and healthy twist on classic shrimp scampi, layered with lasagna noodles for a satisfying meal.
Ingredients
- 12 lasagna noodles
- 1 lb shrimp, peeled and deveined
- 3 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 cup low-fat milk
- 1/4 cup grated Parmesan cheese
- 1 cup spinach, chopped
- 1 tsp lemon zest
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package instructions. Drain and set aside.
- In a skillet, heat olive oil and butter over medium heat. Add garlic and sauté until fragrant.
- Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
- In the same skillet, add milk, Parmesan, spinach, lemon zest, and red pepper flakes. Stir until combined.
- Layer noodles, shrimp, and sauce in a baking dish. Repeat layers.
- Bake for 20 minutes or until bubbly.
Notes
- Use whole wheat lasagna noodles for extra fiber.
- Substitute shrimp with chicken for a different protein.
- Store leftovers in an airtight container for up to 3 days.
