A nutritious layered lasagna perfect for festive occasions.
Ingredients
- 12 lasagna noodles
- 1 lb lean ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jar (24 oz) marinara sauce
- 1 cup low-fat ricotta cheese
- 1 cup shredded part-skim mozzarella
- 1 egg
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups fresh spinach
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package directions.
- Brown turkey with onion and garlic in a skillet.
- Stir in marinara sauce and simmer for 5 minutes.
- Mix ricotta, egg, basil, oregano, salt, and pepper in a bowl.
- Layer noodles, turkey mixture, ricotta mixture, and spinach in a baking dish.
- Repeat layers, ending with noodles.
- Top with mozzarella cheese.
- Bake for 25 minutes until bubbly.
- Let stand for 10 minutes before serving.
Notes
- You can substitute ground turkey with lean beef or chicken.
- For extra vegetables, add sliced zucchini or mushrooms.
- Leftovers keep well refrigerated for up to 3 days.
