Ingredients
- 1 cup cottage cheese
- 2 eggs
- 1/2 cup rolled oats
- 1 tbsp honey
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
- 1 tbsp oil or butter for cooking
Instructions
- Blend cottage cheese, eggs, oats, honey, vanilla, baking powder, and salt until smooth.
- Heat oil or butter in a pan over medium heat.
- Pour 1/4 cup batter per pancake.
- Cook 2-3 minutes until bubbles form.
- Flip and cook 1-2 minutes until golden.
- Serve warm with toppings of your choice.
Notes
- Use full-fat cottage cheese for best texture.
- Let batter rest 5 minutes for thicker pancakes.
- Store leftovers in fridge for up to 3 days.
