Description
A healthy twist on classic lasagna, packed with four types of cheese for maximum flavor.
Ingredients
- 9 lasagna noodles
- 1 cup part-skim ricotta cheese
- 1 cup shredded low-fat mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup crumbled feta cheese
- 2 cups marinara sauce
- 1 cup chopped spinach
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package instructions.
- In a bowl, mix ricotta, mozzarella, Parmesan, feta, spinach, oregano, garlic powder, salt, and pepper.
- Spread a thin layer of marinara sauce in a baking dish.
- Layer 3 noodles, half the cheese mixture, and more sauce. Repeat.
- Top with remaining noodles, sauce, and extra mozzarella.
- Bake for 25 minutes or until bubbly.
- Let cool for 5 minutes before serving.
Notes
- Use whole-wheat noodles for extra fiber.
- Add grilled chicken for more protein.
- Store leftovers in the fridge for up to 3 days.
