Description

A healthy twist on classic lasagna, packed with four types of cheese for maximum flavor.


Ingredients

  • 9 lasagna noodles
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded low-fat mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crumbled feta cheese
  • 2 cups marinara sauce
  • 1 cup chopped spinach
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F.
  2. Cook lasagna noodles according to package instructions.
  3. In a bowl, mix ricotta, mozzarella, Parmesan, feta, spinach, oregano, garlic powder, salt, and pepper.
  4. Spread a thin layer of marinara sauce in a baking dish.
  5. Layer 3 noodles, half the cheese mixture, and more sauce. Repeat.
  6. Top with remaining noodles, sauce, and extra mozzarella.
  7. Bake for 25 minutes or until bubbly.
  8. Let cool for 5 minutes before serving.

Notes

  • Use whole-wheat noodles for extra fiber.
