Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup low-sodium chicken broth
  • 1/2 cup shredded low-fat Swiss cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onions and cook until caramelized, about 15 minutes.
  3. Add garlic, thyme, salt, and pepper. Cook for 1 minute.
  4. Place chicken breasts in a baking dish. Pour chicken broth over them.
