Description
A healthy twist on the classic French onion soup, this chicken bake is packed with flavor and easy to make.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup low-sodium chicken broth
- 1/2 cup shredded low-fat Swiss cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onions and cook until caramelized, about 15 minutes.
- Add garlic, thyme, salt, and pepper. Cook for 1 minute.
- Place chicken breasts in a baking dish. Pour chicken broth over them.
- Top with caramelized onions, then sprinkle with Swiss and Parmesan cheese.
- Bake for 25-30 minutes until chicken is cooked through.
- Serve hot.
Notes
- Use a mandoline for even onion slices.
- For extra flavor, deglaze the skillet with a splash of white wine before adding onions.
- Leftovers keep well in the fridge for up to 3 days.
