Ingredients
- 500g ground chicken
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 egg
- 1/2 cup breadcrumbs
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 cup low-fat mozzarella cheese, shredded
- 1/2 cup low-sodium chicken broth
Instructions
- Preheat oven to 375°F (190°C).
- Mix ground chicken, egg, breadcrumbs, garlic, thyme, salt, and pepper in a bowl.
- Form into small meatballs.
- Heat olive oil in a skillet over medium heat. Cook onions until caramelized.
- Add meatballs and cook until browned.
- Transfer to a baking dish. Pour chicken broth over meatballs.
- Sprinkle cheese on top.
