Ingredients

  • 500g ground chicken
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup low-fat mozzarella cheese, shredded
  • 1/2 cup low-sodium chicken broth


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix ground chicken, egg, breadcrumbs, garlic, thyme, salt, and pepper in a bowl.
  3. Form into small meatballs.
  4. Heat olive oil in a skillet over medium heat. Cook onions until caramelized.
  5. Add meatballs and cook until browned.
  6. Transfer to a baking dish. Pour chicken broth over meatballs.
