Ingredients
- 1 package (9 oz) cheese tortellini
- 2 cups thinly sliced onions
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 cup shredded low-fat Swiss cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook tortellini according to package instructions, then drain and set aside.
- Heat olive oil in a skillet over medium heat. Add onions and cook until caramelized, about 15 minutes.
- Add garlic and cook for 1 minute.
- Stir in beef broth, thyme, salt, and pepper. Simmer for 5 minutes.
- Combine cooked tortellini with the onion mixture.
- Transfer to a baking dish and top with Swiss and Parmesan cheese.
- Bake for 15-20 minutes until cheese is melted and bubbly.
