Description

A delicious and healthy twist on classic meatball subs with garlic bread and lean meatballs.


Ingredients

  • 1 lb lean ground turkey or chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 whole wheat sub rolls
  • 2 tbsp olive oil
  • 1 cup marinara sauce
  • 1/2 cup shredded part-skim mozzarella
  • 1 tbsp chopped fresh parsley


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix ground meat, breadcrumbs, egg, garlic, oregano, salt, and pepper in a bowl.
  3. Shape mixture into 12 small meatballs.
  4. Bake meatballs for 20 minutes or until cooked through.
  5. Slice sub rolls lengthwise and brush with olive oil.
  6. Toast rolls for 5 minutes until golden.
  7. Warm marinara sauce in a saucepan.
  8. Place 3 meatballs in each roll, top with sauce and cheese.
  9. Return to oven for 3 minutes to melt cheese.
  10. Sprinkle with parsley before serving.
