Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 cup chopped parsley


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Season chicken with salt and pepper, then brown for 3-4 minutes per side.
  4. Remove chicken and set aside.
  5. In the same skillet, melt butter and sauté garlic for 30 seconds.
  6. Add rice, thyme, and chicken broth. Stir well.
  7. Return chicken to the skillet, nestling it into the rice.
  8. Cover and bake for 25 minutes.
  9. Remove from oven and let rest for 5 minutes.
  10. Garnish with parsley before serving.

  • Use brown rice for extra fiber – adjust cooking time to 40 minutes.
