Description
A simple and healthy one-pan meal with tender chicken, rice, and garlic butter sauce.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 2 cups chicken broth
- 3 cloves garlic, minced
- 2 tbsp butter
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
- 1/4 cup chopped parsley
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Season chicken with salt and pepper, then brown for 3-4 minutes per side.
- Remove chicken and set aside.
- In the same skillet, melt butter and sauté garlic for 30 seconds.
- Add rice, thyme, and chicken broth. Stir well.
- Return chicken to the skillet, nestling it into the rice.
- Cover and bake for 25 minutes.
- Remove from oven and let rest for 5 minutes.
- Garnish with parsley before serving.
Notes
- Use brown rice for extra fiber – adjust cooking time to 40 minutes.
- Add vegetables like broccoli or peas for more nutrients.
- Leftovers keep well in the fridge for 3 days.
