Ingredients
- 1 lb cod fillets, cut into strips
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp sweet chili sauce
- 1 lime, juiced and zested
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix melted butter, garlic, olive oil, sweet chili sauce, lime juice, salt, and pepper.
- Toss cod strips in the mixture until fully coated.
- Arrange cod strips on the baking sheet in a single layer.
- Bake for 12-15 minutes until fish is opaque and flakes easily.
- Garnish with lime zest and fresh parsley before serving.
