Description

A quick and healthy dish featuring tender shrimp rolled in a garlic butter sauce, served with a spicy Cajun dip.


Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp Cajun seasoning
  • Fresh parsley for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix melted butter, minced garlic, olive oil, paprika, cayenne, oregano, thyme, salt, and black pepper.
  3. Toss shrimp in the garlic butter mixture until fully coated.
  4. Roll each shrimp tightly and place on a baking sheet.
  5. Bake for 10-12 minutes until shrimp turn pink and opaque.
  6. While shrimp bake, mix Greek yogurt, lemon juice, and Cajun seasoning for the dip.
  7. Serve shrimp roll-ups hot with Cajun dip and garnish with fresh parsley.
