Ingredients
- 2 lbs mixed-color potatoes (red, yellow, purple), cubed
- 3 cloves garlic, minced

- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Wash and cube potatoes into even-sized pieces.
- In a bowl, mix potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Spread potatoes on a baking sheet in a single layer.
- Roast for 30-35 minutes, stirring halfway, until tender and golden.
- Sprinkle fresh parsley before serving.
