Crispy roasted potatoes with garlic, parmesan, and herbs for a flavorful side dish.


Ingredients

  • 4 large potatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup grated parmesan
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Spread on a baking sheet in a single layer.
  4. Roast for 25 minutes, then flip and sprinkle with parmesan.
  5. Roast for another 10-15 minutes until crispy and golden.
