Ingredients
- 4 large potatoes, diced
- 3 cloves garlic, minced
- 1/4 cup grated parmesan
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Spread on a baking sheet in a single layer.
- Roast for 25 minutes, then flip and sprinkle with parmesan.
- Roast for another 10-15 minutes until crispy and golden.
Notes
- Use russet or Yukon gold potatoes for best results.
- For extra crispiness, soak diced potatoes in cold water for 10 minutes before roasting.
- Fresh herbs can be used instead of dried.
