Ingredients

  • 2 boneless, skinless chicken
  • 4 cups low-sodium chicken broth
  • 1 tbsp grated fresh ginger
  • 2 cloves minced garlic
  • 1 lemon, juiced and zested
  • 1 cup sliced carrots
  • 1 cup chopped celery
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 cups baby spinach


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 4 minutes per side.
  3. Remove chicken and set aside.
  4. Add ginger, garlic, carrots, and celery to the pot. Sauté for 3 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Shred the cooked chicken and return it to the pot.
  7. Reduce heat and simmer for 15 minutes.
  8. Stir in lemon juice, zest, and spinach. Cook for 2 more minutes.
  9. Season with black pepper.
  10. Serve hot.
