A light and refreshing soup packed with the flavors of ginger and lemon, perfect for a healthy meal.
Ingredients
- 2 boneless, skinless chicken
- 4 cups low-sodium chicken broth
- 1 tbsp grated fresh ginger
- 2 cloves minced garlic
- 1 lemon, juiced and zested
- 1 cup sliced carrots
- 1 cup chopped celery
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 2 cups baby spinach
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned, about 4 minutes per side.
- Remove chicken and set aside.
- Add ginger, garlic, carrots, and celery to the pot. Sauté for 3 minutes.
- Pour in chicken broth and bring to a boil.
- Shred the cooked chicken and return it to the pot.
- Reduce heat and simmer for 15 minutes.
- Stir in lemon juice, zest, and spinach. Cook for 2 more minutes.
- Season with black pepper.
- Serve hot.

- Use fresh ginger for the best flavor.
- Adjust lemon juice to taste.
- Substitute spinach with kale if preferred.
