Description
A warm and comforting soup with sweet potatoes spiced with gingerbread flavors.
Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add sweet potatoes and spices, stir for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until sweet potatoes are tender.
- Blend soup until smooth.
- Stir in coconut milk, season with salt and pepper.
- Serve warm.
