Description

A delicious and healthy gluten-free spinach lasagna that’s perfect for any meal. Packed with fresh spinach and rich flavors, this dish is both nutritious and satisfying.


Ingredients

  • 12 gluten-free lasagna noodles
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the gluten-free lasagna noodles according to package instructions. Drain and set aside.
  3. In a bowl, mix ricotta cheese, egg, Parmesan cheese, garlic powder, basil, salt, and pepper.
  4. Spread a thin layer of marinara sauce at the bottom of a baking dish.
  5. Layer 4 lasagna noodles over the sauce.
  6. Spread half of the ricotta mixture over the noodles, followed by half of the chopped spinach.
  7. Sprinkle 1 cup of mozzarella cheese on top.
  8. Repeat the layers: sauce, noodles, ricotta mixture, spinach, and mozzarella.
  9. Top with the remaining noodles, sauce, and mozzarella cheese.
  10. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until bubbly.
  11. Let it cool for 5 minutes before serving.
