Ingredients
- 3 medium zucchinis, sliced lengthwise
- 1 lb ground turkey (or plant-based meat substitute)
- 1 cup ricotta cheese (or dairy-free alternative)
- 1 egg
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese (or dairy-free alternative)
- 1/4 cup grated Parmesan cheese (optional)
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Slice zucchini lengthwise into thin strips and lightly salt them. Let sit for 10 minutes to remove excess moisture, then pat dry.
- In a skillet, brown the ground turkey over medium heat. Drain excess fat if needed.
- Stir in marinara sauce, garlic powder, oregano, and basil. Simmer for 5 minutes.
- In a bowl, mix ricotta cheese, egg, and a pinch of salt and pepper.
- In a baking dish, layer zucchini strips, ricotta mixture, and meat sauce. Repeat layers, finishing with meat sauce.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake for 30-35 minutes or until bubbly and golden.
- Let rest for 10 minutes before serving.
Notes
- Use a mandoline for even zucchini slices.
- For a crispier top, broil for the last 2 minutes.
- Make ahead and refrigerate before baking for easier prep.
