Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 cup orzo
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup chopped fresh parsley


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes per side.
  3. Remove chicken and shred it into bite-sized pieces.
  4. In the same pot, add garlic and sauté for 30 seconds.
  5. Pour in chicken broth and bring to a boil.
  6. Add orzo and cook for 8-10 minutes until tender.
  7. Return shredded chicken to the pot.
  8. Stir in lemon juice, oregano, salt, and pepper.
  9. Simmer for 5 minutes to blend flavors.
  10. Garnish with fresh parsley before serving.
