Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup kalamata olives, pitted
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F. Season salmon with salt, pepper, and oregano.
  2. Bake salmon for 12-15 minutes until cooked through.
  3. In a bowl, combine quinoa, cherry tomatoes, cucumber, red onion, and olives.
  4. Whisk together olive oil, lemon juice, salt, and pepper to make the vinaigrette.
