Ingredients
- 2 salmon fillets (6 oz each)
- 1 cup cooked quinoa
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup kalamata olives, pitted
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Season salmon with salt, pepper, and oregano.
- Bake salmon for 12-15 minutes until cooked through.
- In a bowl, combine quinoa, cherry tomatoes, cucumber, red onion, and olives.
- Whisk together olive oil, lemon juice, salt, and pepper to make the vinaigrette.
- Flake the salmon and add it to the bowl.
- Drizzle with vinaigrette and top with feta cheese.
- Toss gently and serve.
