Description
A fresh and healthy green bean salad with a simple dressing. Perfect for a light meal or side dish.
Ingredients
- 1 pound fresh green beans, trimmed
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a pot of water to boil. Add green beans and cook for 3 minutes.
- Drain beans and rinse under cold water.
- In a small bowl, whisk together olive oil, lemon juice, mustard, garlic, salt, and pepper.
- Toss green beans with the dressing.
- Add red onion and parsley. Mix well.
- Serve immediately or chill for later.
