Description

Ingredients

  • 1 lb fresh green beans, trimmed
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red onion
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste


Instructions

  1. Blanch green beans in boiling water for 2 minutes, then transfer to ice water to cool. Drain well.
  2. In a large bowl, whisk together olive oil, vinegar, mustard, salt, and pepper.
  3. Add green beans, bacon, cheddar cheese, and red onion to the bowl.
  4. Toss gently to coat everything evenly.
