Description

Ingredients

  • 2 cups spinach, chopped
  • 1 cup kale, chopped
  • 1 medium zucchini, diced
  • 1 cup broccoli florets
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 tbsp lemon juice


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add zucchini and broccoli, cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, add spinach, kale, salt, and pepper. Simmer for 10 minutes.
  6. Stir in parsley, basil, and lemon juice.
  7. Blend until smooth or leave chunky as desired.
  8. Serve warm.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Add a dollop of Greek yogurt for extra creaminess.
