Ingredients
- 2 cups spinach, chopped
- 1 cup kale, chopped
- 1 medium zucchini, diced
- 1 cup broccoli florets
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1 tbsp lemon juice
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add zucchini and broccoli, cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, add spinach, kale, salt, and pepper. Simmer for 10 minutes.
- Stir in parsley, basil, and lemon juice.
- Blend until smooth or leave chunky as desired.
- Serve warm.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Add a dollop of Greek yogurt for extra creaminess.
