Ingredients

  • 500g boneless chicken thighs, sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1 tbsp tahini
  • 1 tbsp chopped parsley
  • 2 cups cooked quinoa or rice
  • 1 cucumber, sliced
  • 1 tomato, diced
  • 1/4 red onion, thinly sliced


Instructions

  1. In a bowl, mix chicken with olive oil, lemon juice, paprika, cumin, garlic powder, turmeric, salt, and black pepper. Let marinate for 30 minutes.
  2. Preheat grill or pan over medium-high heat. Cook chicken for 5-6 minutes per side until fully done.
  3. In a separate bowl, combine yogurt, minced garlic, tahini, and parsley to make the creamy garlic sauce.
  4. Assemble bowls with quinoa or rice, grilled chicken, cucumber, tomato, and red onion.
