Description

A hearty and healthy one-pan meal with ground turkey, sweet potatoes, and vegetables.


Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Add onion and garlic, sauté for 2 minutes.
  4. Add ground turkey, cook until browned.
  5. Stir in sweet potatoes, bell pepper, paprika, cumin, salt, and pepper.
  6. Transfer skillet to oven and bake for 20-25 minutes until sweet potatoes are tender.
  7. Sprinkle cheese on top (if using) and bake for another 5 minutes.
  8. Garnish with fresh parsley before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Substitute ground chicken or beef for turkey if preferred.
