Description
A hearty and healthy one-pan meal with ground turkey, sweet potatoes, and vegetables.
Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 bell pepper, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Add onion and garlic, sauté for 2 minutes.
- Add ground turkey, cook until browned.
- Stir in sweet potatoes, bell pepper, paprika, cumin, salt, and pepper.
- Transfer skillet to oven and bake for 20-25 minutes until sweet potatoes are tender.
- Sprinkle cheese on top (if using) and bake for another 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Substitute ground chicken or beef for turkey if preferred.
- Add spinach or kale for extra greens.
