Ingredients
- 1 ripe avocado, mashed
- 1/2 lime, juiced
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 medium cooked shrimp, peeled and deveined
- 12 small whole-grain tortilla chips or cucumber slices
Instructions
- In a bowl, mix mashed avocado, lime juice, red onion, cilantro, salt, and pepper to make guacamole.
- Spoon a small amount of guacamole onto each tortilla chip or cucumber slice.
- Top each with one shrimp.
- Serve immediately.
