A hearty and healthy ham and white bean soup that’s perfect for a cozy meal.
Ingredients
- 1 cup diced ham
- 2 cups white beans
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add onions, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 minute.
- Stir in ham, white beans, thyme, and bay leaf.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Remove bay leaf before serving.
Notes
- You can use canned white beans for convenience.
- Add more broth if you prefer a thinner soup.
