Ingredients
- 2 carrots, chopped
- 2 parsnips, chopped
- 1 sweet potato, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add carrots, parsnips, and sweet potato. Cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, add thyme and rosemary. Simmer for 20 minutes.
- Season with salt and pepper. Serve hot.
