Ingredients

  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 1 sweet potato, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add carrots, parsnips, and sweet potato. Cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, add thyme and rosemary. Simmer for 20 minutes.
  6. Season with salt and pepper. Serve hot.
