Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1 red bell pepper, sliced
- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/2 tsp red pepper flakes
- 2 green onions, sliced (for garnish)
Instructions
- Place chicken breasts in the crockpot.
- Add pineapple chunks and sliced bell pepper.
- In a bowl, mix soy sauce, honey, garlic, ginger, and red pepper flakes.
- Pour the sauce over the chicken and vegetables.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Shred the chicken with a fork and mix with the sauce.
- Garnish with sliced green onions before serving.
Notes
- Serve over rice or quinoa for a complete meal.
- For extra heat, add more red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
